This recipe has vegetables, rice, and beans all in an easy skillet. I choose to cook 1 cup of brown rice separately and omit the water instead of step two as stated. Just stir the cooked rice into the vegetables, beans, and tomatoes at that point. Topping with a small amount of low fat or vegan cheese is an option if it helps your kids like the look of it better, but I don’t think I ever put enough that they even taste it.
