Oat & Lentil “Meat Loaf”

This recipe is a little labor intensive but really tasty and rewarding! It doesn’t taste like you are eating meatloaf, but my family really likes this. It does have quite a bit of fat with the tofu and walnuts, so don’t use this if you are trying to keep your calories from fat really low. A good BBQ sauce is necessary. I like Primal Kitchen’s Classic BBQ Sauce Organic Unsweetened.
